Let’s face it – everybody loves guacamole. And if you don’t? Well… that’s weird. Just kidding. But seriously, who doesn’t love this fiery delicious dip? Spread it on toast, smear it on rice cakes, dip your chicken in it, whack it in your fajitas. Eat it in whatever way you like! Without further ado – here is my super simple guac recipe!
Ingredients (Serves 8 as an accompaniment)
3 Ripe Avocados (scoop the flesh out – discard the skin and stone)
Juice and zest of 1 lime
1 small red onion, finely diced
Small handful of fresh coriander
2 vine tomatoes, diced
1 garlic clove (minced through a garlic press)
1/2 – 1 red chilli, finely diced (add more or take some away depending how spicy you want it)
Pinch of salt and freshly ground black pepper
Just mix everything together in a bowl and whack in the fridge for an hour at least before serving.
