Jerk Chicken Burgers

Prep Time 15 minutes
Cook Time 10 minutes
Servings 2

  • 2 chicken breasts
  • 2 tsp jerk seasoning (or more if you like!)
  • 1 large beef tomato (sliced)
  • 1 little Gem lettuce (shred or chop)
  • 1 tbsp mayonnaise
  • 1 onion sliced into rings
  • juice of one lime
  • 2 burger buns
  • 2 tsp olive oil

  1. Sandwich the chicken breasts between two layers of cling film and use a rolling pin to bash them with. This will help flatten them.

  2. In a bowl, add the olive oil, jerk seasoning and lime juice to make a marinade. Coat the chicken breast with the marinade and leave for 10 minutes.

  3. Heat a frying pan over a medium heat, then fry the chicken for around 5 minutes on each side, or until cooked through. Remove the chicken from the pan.

  4. Prepare the burger buns by toasting them slightly, adding slices of onion, tomato and lettuce with a small dollop of mayonnaise. Add the chicken and you're done!
