Slow Cooker Beef Curry

This slow cooker recipe is perfect for the winter drawing in – just what you and your family need. Something quick and easy to prepare in the morning so that you can come home to the perfect family meal. Taken from Rachael’s ‘Cut the Crap 4’ recipe book, this recipe was designed to be super quick and easy to create.

  • 500 g stewing steak (cut into cubes)
  • 2 400g tins chopped tomatoes
  • 1 large white onion diced
  • 2 cloves fresh garlic minced
  • 3 cm piece of fresh ginger
  • 2 small red chillis
  • 3 star anise
  • 2 tbsp ground cumin
  • 2 tbsp ground coriander
  • 250 ml fresh beef stock
  • 2 medium sized white potatoes
  • 10 cherry tomatoes
  • 40 g spinach


  1. Place all the ingredients except for the potatoes, tomatoes and spinach into your slow cooker. Stir and add some salt and pepper. Set your slow cooker to ‘high’.

  2.  Cook on high for 5 hours, then add the potatoes and tomatoes and cook for a further 30 minutes. Add the spinach just before serving and stir through until wilted. 

  3.  Remove the star anise before serving and sprinkle with freshly chopped coriander for serving. Add salt and pepper to taste if required.
