
Vegan Mac & Cheese
Ingredients
- 340 g pasta
- 160 g cashew nuts
- 3 tbsp coconut milk (full fat)
- 140 ml water
- 3 tbsp lemon juice
- 1 tsp garlic powder
- 2 tsp onion powder
- 1 tsp smoked paprika

Topping
- vegan parmesan or other vegan cheese
- 1 tbsp fresh parsley

Soak the cashew nuts in boiling water for 10 minutes. Meanwhile, cook the pasta to package instructions.

Mix the pasta with the sauce and place in an ovenproof dish. Grate some vegan cheese over the top and sprinkle with fresh parsley. Place until the grill to melt the cheese and allow it to go crispy.
